Chocolate or Caramel Truffettes

A delicious no-bake ball, packed full of nuts and oats.

Balls

Ingredients

  • 2 cups sugar
  • 1/2 cup unsalted butter
  • 1/2 cup milk
  • 1/2 cup unsweetened cocoa powder
  • 2 cups quick-cooking oats
  • 1 cup pecans (toasted, chopped)
  • 1 teaspoon vanilla
  •   coconut (optional)
  •   powdered sugar (optional)

Instructions

Combine sugar, butter, and milk in 3-qt. saucepan and bring to a boil over low heat. Simmer 3 minutes, stirring frequently. Remove from heat and whisk in cocoa, oatmeal, nuts, and vanilla. Chill mixture for about an hour. Shape into 36 balls and roll in additional nuts (if desired). You may also roll in coconut or powdered sugar or even leave plain. Refrigerate in covered container or allow to dry at room temperature (or do some of each).

Notes

For caramel version, substitute cocoa powder for brown sugar.
