Gluten Free Kolacky Cookies

A Polish favorite revised for a gluten free recipe. These cookies are not just stunning to look at, but a delicious delicacy.

Ingredients

  • 1 cup butter ((1 stick) softened)
  • 4 ounces cream cheese (softened)
  • 1 cup gluten free flour
  • 1/2 teaspoon xanthan gum
  •   Your choice of fruit preserves

Instructions

Beat butter and cream cheese in large bowl until smooth. Combine gluten–free flour and xanthan gum in medium bowl. Gradually add flour mixture to butter mixture beating until soft dough forms. Divide the dough in half and shape into discs. Wrap discs tightly in plastic wrap. Refrigerate about 1 hour or until firm.

Preheat oven to 375 degrees. Lightly four clean surface and roll out dough, one disc at a time to 1/8-inch thickness. Cut into 2 ½-inch square. Spoon 1 teaspoon preserves into center of each square. Next, Bring up two opposite corner to center; pinch together tightly to seal. Fold sealed top to one side. Place 1 inch apart on ungreased cookie sheets. Bake 10-15 minutes or until lightly browned. Remove to cooling wire racks and let cool completely.
